Wikipedia has an interesting theory.
That Wind Waker takes place 100 years after adult-Link was sent back to have a childhood, and Twilight Princess comes from Ganondorf being sealed in the Twilight Realm after being tried and arrested because of child-Link and Zelda warning the King.
That doesn't really account for all the other games, though.
To answer your questions, TP, the hero mentioned in the Minish Cap was Gustaf, the first one to recieve the Picori Sword and drive off the evil, becoming the very first King of Hyrule.
So it was before the first Link.
And the actual Zelda Legend goes something like this...
After Gustaf's time, but before any of the Zelda games, there was a Prince in Hyrule that wanted the Triforce. A wizard tells him that the Prince's younger sister, whose name is Zelda, knows of it's whereabouts. When Zelda refuses to tell, the wizard puts her in a deep sleep from which she may never awaken. The wizard then dies from using all that power. In his grief, the Prince places Zelda on an altar in North Castle and decrees that every female child born to the Royal Family from then on, must be named Zelda.
That's why the Princesses are all Zelda.

Maybe, Link could enlist to be Zelda's bodyguard (to earn money for his family), and then Zelda gets kidnapped by Ganon (surprise, surprise) and Link feels like he needs to save her... |

Compensation: One (1) Red Rupee per day.
*It is preferred that the applicant purchase his armaments at the Hyrule Weapons Shop.
However, there are other acceptable shops at the following locations:
> Kakariko Village
> Goron City
> Zora's Domain (must obtain a Royal Writ of Passage)
Apply at the Weapons Shop in Hyrule Castle Town.
