Rabbits

As I was playing Spirit Tracks, wandering about Hyrule, capturing rabbits, I started thinking about them...the rabbits, I mean.
More specifically, rabbits in the Zelda series.
They're not really in that many Zelda games. They rarely (if ever, I don't remember) appear in Hyrule (other than Spirit Tracks). Although they have been in the Oracle games and Link's Awakening (there might be more).
Then, there's A Link to the Past, where Link, when he enters the Dark World--maybe for the first time, I can't remember--transforms into a rabbit. A very adorable one, by the way.
Then there's the Bunny Hood. In OoT, the Running Man (the Postman in MM) buys it from you and tells you about his fascination with rabbits, who, in the game, are extinct.
SO...the point of this topic (yes, there is one)...
What do you think about the uniqueness that, in some games, rabbits seem to have?
More specifically, why do you think Link turns into one in LttP?
And...is there more to the "rabbit extinction" of OoT than just the mention of it?
It's possible that Link turning into a rabbit is symbolic of...his.......innocence? Or maybe his humility? Something like that, I guess.

Oooh! I never thought about that before. There must only be rabbits because it's the New Hyrule! ;D
